Savory oats might sound unconventional, but one bite of this hearty bowl will make you a believer. Steel-cut oats are seasoned with a touch of tamari and topped with tender sweet potato, peppery arugula, and a savory breakfast sausage patty for a morning meal that is warm and satisfying.

Overnight Savory Steel-Cut Oats with Sweet Potato and Sausage

Ingredients

  • 1/2 cup (88g) steel-cut oats
  • 2 cups water
  • 1 tsp tamari soy sauce
  • 1 cup (133g) cubed sweet potato
  • 1 cup arugula
  • 2 turkey breakfast sausage patties
  • 2 tsp (13g) pure maple syrup

Directions

In a small pot, combine the steel-cut oats, water, and tamari soy sauce. Place over high heat and bring to a full boil. Cover and cook for 1 minute, reducing the heat as needed to prevent boiling over. Turn off the heat and let cool. Once cool, place the covered pot in the refrigerator overnight.

The next morning, return the pot to high heat and bring the oats back to a boil. Stir frequently and cook for about 5 minutes, or until the oats are tender.

Steam the sweet potato cubes for about 10 minutes, or until tender. Set aside. 

Just before serving, cook the sausage patties in a nonstick skillet according to package directions, about 3 minutes.

Divide the oats evenly between 2 shallow bowls. Arrange 1/2 cup sweet potato cubes, 1/2 cup arugula, and 1 sausage patty in each bowl. Drizzle each serving with 1 tsp maple syrup and serve immediately.
